Omg, it has been far too long since I've made a new blog post! Not that I'm super good at posting in the first place, but I have honestly been having a lot of things happening in my personal life that has taken my focus off of performance, social media and my general web presence for a while. Hopefully things will be calming down a bit now.

On a totally unrelated note, I bought myself a Vitamix. It makes amazing smoothies, like the kind you get at that delicious smoothie place down the road. More importantly to me, it makes AWESOME soup. Yes, soup. My boyfriend's sister used her Vitamix to make me an allergy free butternut squash soup at Thanksgiving. I was super impressed. So this evening I decided to make my first Vitamix soup. I chose a recipe out of the book that came with my machine. It was for a Potato, Spinach and Chicken soup. It was already gluten and soy free, I just needed it to be dairy free and vegetarian. I substituted a non-chicken broth and almond milk for the regular stuff, then left out the chicken. It turned out so creamy and filling and the Vitamix actually heated the soup to the perfect serving temperature! I made it vegan, but you can find the original recipe here.
